A Restaurant-Worthy Meal at Home

Parmesan Chicken Tenders is one of my favourite dishes to cook. It honestly feels like I’ve ordered something at a restaurant when I make this at home. The parmesan sauce is a combination of tangy, creamy, and crunchy flavours that create an amazing palette in your mouth. Not only is it delicious, but it’s also super simple to make for those busy weeknights.

The chicken is the only part that requires cooking. The sauce is combined in a bowl, and the chicken is tossed into the yummy Parmesan sauce to coat it. Now, you can crumb the chicken to bring in another crunchy element, or if you just like your chicken crumbed, then go for it. Personally, I like to sear my chicken with salt and pepper just so I feel like I’m being a little healthier.

I always put a bit of extra on sauce on the plate when I serve it with chips as it doubles as a dip!

I’ve also drizzled a bit of Frank’s Buffalo sauce over the coated chicken to add a bit of spice to the dish. This adds another layer of flavour, making it even more irresistible. Serve this dish with your favourite salad, chips, or garlic bread for a complete meal.

The sauce can also be prepared the night before so you just have to cook the chicken and toss it in the sauce when your ready making for a quick fix dinner.

One of my main goals is to make week nights easier. It’s not easy getting home from picking up the kids, then getting homework done and then having to cook dinner. Having meals prepped gives me the freedom to play or sit down with the kids a bit more, especially when hubby is travelling. My little boy loves this without the chilli but I give my daughter just the seared chicken because she isn’t a fan of sauces (even tomato sauce). So at least with this meal I’m not having to prepare a whole different meal for her.

Creamy Parmesan Chicken

Ingredients

  • 800g chicken tenders
    1 tbsp avocado oil
    5 garlic cloves
    ½ cup mayo
    ½ cup grated parmesan cheese
    1 tbsp apple cider vinegar
    1 tsp lemon juice
    ½ tsp salt
    ¼ chilli flakes (optional)
    ¼ tsp oregano
    ¼ tsp basil
    ¼ tsp pepper
    ¼ red capsicum diced finely
     1 tbsp cream

Directions

  • Pound the chicken with a meat hammer to tenderise it. Sprinkle a little pit of salt and pepper to season.
  • Drizzle the avocado oil into a fry pan and heat up on high. Add the chicken breast and cook for about 10 minutes flipping half way. Check to see there cooked in the middle as depending on the size of the chicken this time can vary.
  • While chicken is cooking, in large bowl add the remaining ingredients – garlic, mayo, parmesan, apple cider vinegar, lemon juice, salt, chilli flakes (optional), oregano, basil, pepper, diced capsicum and cream.
    Stir the sauce well until.
  • Add cooked chicken into the sauce and toss to coat. Add a few pieces at a time.
    Garnish with chives and serve with your desired sides. Enjoy!

Notes

  • Serve with garlic bread, salad, chips. Scoop a bit of extra sauce onto each serving to which doubles as a dip for the chips. Garnish with Chives

  • You can crumb the chicken if you like, this recipe is just that little bit healthier when the chicken is seared.
  • Pounding the chicken breaks down the fibres making it really extra tender.
